Broiled Chops


If you hadn't already guessed, we love pork chops. I have posted a ton of ground beef and pork recipes, the reasons being: 1. we like them 2. they're affordable 3. they're versatile. The recipe actually came from me standing in a really long checkout line at the grocery store a few weeks ago. I was flipping through one of those thick Taste of Home magazine type cookbooks, spotted it, and wrote down the name. I came home and looked it up on the website and thought it sounded really good. The cumin, garlic powder, onion powder, and liquid smoke were not in the original recipe. I made the sauce, tasted it, and realized it needed some help. I started grabbing things out of the cabinet and adding them in until I found a much better taste combination. We really enjoyed this recipe. The vinegar and spice combination goes great with pork. Brad commented that he thought the sauce would be outstanding on pork ribs.

BROILED CHOPS
3/4 cup ketchup
3/4 cup water
1-2 TBSP white vinegar
1 TBSP Worcestershire sauce
2 tsp brown sugar
1 tsp salt
1/2 tsp paprika
1/2 tsp chili powder
1/2 tsp cumin
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp liquid smoke
1/8 tsp pepper
6 boneless pork loin chops
In a large saucepan, combine the first 12 ingredients; bring to a boil. Reduce heat; simmer for 5 minutes, stirring occasionally. Set aside half of the sauce. Baste and broil chops about 4 in. from the heat for 4 minutes on each side. Baste with remaining sauce. Broil for 3-4 minutes longer or until meat juices run clear turning and basting occasionally. Serve with reserved sauce.

These look delicious, Heidi! We typically only make them in the summer, when my husband grills, but I'm always looking for ideas as to how to cook them indoors!
