Coconut Cream Pie

I love coconut cream pie. It's dreamy. What's not to love about creamy, cool whippy goodness?

2/3 cup sugar
1/3 cup cornstarch
2 TBSP flour
1/4 tsp. salt
3 eggs
3 cups milk
1 TBSP butter
2 tsp. vanilla
1 1/4 cup coconut
graham cracker crust
cool whip
toasted coconut (optional)

Combine 1st 6 ingredients in a saucepan. Slowly bring to boil whisking constantly. Continue to boil 1 minute. It will thicken up during this time and that is how you know it's ready. Remove from heat. Stir in butter, vanilla, and coconut. Pour into crust. Cover with plastic wrap and chill for at least 8 hours. Top with cool whip and toasted coconut right before serving.

Ok Now I am starting on the desserts. The coconut cream pie looks great. IT is one on my favorite pies.
