Sunday Pork Roast


This is another tried-and-true FAVORITE. This pork roast is moist and yum-o-licous in its homemade BBQ type sauce.

SUNDAY PORK ROAST
1 boneless pork loin or ribeye roast (about 2 pounds)
1/3 cup chopped onion
1 minced garlic clove (or 1 tsp. garlic powder)
1 tsp oil
1 can tomato soup, undiluted
1/3 cup water
2 TBSP brown sugar
2 TBSP lemon juice
2 TBSP worchestershire sauce
2 TBSP dijon mustart
1/8 - 1/4 tsp hot pepper sauce


Place roast on roasting pan. Bake uncovered at 325 for 1 1/2 hours. In skillet saute' onion and garlic in oil until onions are translucent. Add remaining ingredients to make sauce. Remove pork from oven and place in a foil lined 8x8 baking pan (I line it with foil to make less of a mess in my baking pan). Pour sauce over meat and bake 1 hour at 350, basting occasionally. Let stand 10-15 minutes before slicing. 6-8 servings

Bookmarked! I just bought a small roast and then wondered what to do with it. Perhaps this coming weekend when I more time. Can't wait!
