Twice Baked Love Spuds

I'm getting into the spirit of Valentine's Day... hence the name love spuds :) If you make these, someone is going to love you. Warm + Creamy + Cheesy = Love.
TWICE BAKED LOVE SPUDS
4 large potatoes
4 TBSP milk
2 TBSP butter
3 TBSP sour cream
1/4 cup shredded cheese
2 green onions chopped
salt and pepper to taste

Bake potatoes until they are soft but still firm (you don't want them to fall apart). Let potatoes cool slightly. Cut baked potatoes in half and scoop out pulp within 1/4 inch of shells edge. Mash pulp with milk, butter, sour cream, salt, and pepper. Stir in 1 chopped green onion. Stuff shells with mashed pulp mixture and sprinkle with cheese and remaining chopped green onion. Place on baking sheet and bake at 350 for 15 minutes, or until cheese is melted and bubbly.
