Applesauce Barbecue Chicken


I like chicken, but Brad usually doesn't. Well, he didn't complain one bit about eating this... he actually complimented it! That would make this dish a huge winner. It's moist and very flavorful. If you like dishes sweet and spicy this is a must try. It really is wonderful and is done in about 20 minutes...talk about a quick main dish! I found this recipe in the new Simple & Delicious. It's a great magazine put out by Taste of Home. S & D is a great source for tasty and inexpensive meals. This chicken came in under $1.50 per serving.
*UPDATE* These are GREAT leftover. The apple barbecue flavors sink down into the meat making it even more juicy and flavorful the second time around.


APPLESAUCE BARBECUE CHICKEN
4 boneless chicken breast halves (about 6 oz. each)
1/2 tsp pepper
2/3 cup chunky applesauce
2/3 cup barbecue sauce
2 TBSP brown sugar
1 tsp chili powder

Sprinkle chicken with pepper. In a large non-stick skillet brown chicken on both sides. In small bowl, combine the remaining ingredients; pour over chicken. Cover and cook 7-10 minutes longer or until meat juices run clear or meat thermometer reads 170.

The BBQ-applesauce-chili powder sounds like an excellent combination and a welcome change to heavy BBQ sauce. I'm looking forward to trying it.

This sounds really interesting, apples go so well with pork, so why not chicken too?
