Cuban Midnight Sandwich

Today wasn't a good day for me. My car broke down on the way home from the grocery store and I had a hard time getting ahold of anyone to come and get me. I was worried about getting home in time to get Makayla because she had an early out today. I finally I got ahold of my mom to get me and Brad. I get home and get Makayla off the bus and she is sick... so I head straight in to the doctors office. She has a cold turned into sinus infection :( Needless to say, I didn't have a lot of time to spend on dinner, so I took the easy way out. I had these sandwiches made and on the table in less than 10 minutes. Brad liked them so well I had to make more. These were quick, easy, and only about $1.10 per sandwich. We give them an A++.

CUBAN MIDNIGHT SANDWICH
1/2 cup mayonnaise
2 1/2 tablespoons Italian dressing
4 hoagie rolls, split lengthwise
4 tablespoons prepared mustard
1/2 pound thinly sliced deli turkey meat
1/2 pound thinly sliced cooked ham
1/2 pound thinly sliced Swiss cheese
1 cup dill pickle slices
olive oil

In a small bowl, mix together mayonnaise and Italian dressing. Spread mixture on hoagie rolls. Spread each roll with mustard. On each roll, arrange layers of turkey, ham, and cheese. Top each with dill pickle slices. Close sandwiches, and brush tops and bottoms with olive oil.
Heat a non-stick skillet over medium high heat. Place sandwiches in skillet. Cook sandwiches for 2 minutes, pressing down with a plate covered with aluminum foil. Flip, and cook for 2 more minutes, or until cheese is melted.

Sounds like a nice dinner, nothing wrong with a terrific sandwich. Sorry you had such a bad day. I hopeyour weekend is much brighter.

I have made a version of this sandwich...sounds yummy. I am sooo sorry to hear about how awful you day had gone tho...Hope she gets to feeling better fast.
