Frozen Peanutty Pudding Pops

Today must be 2 post Tuesday! I hope you don't mind. I couldn't wait to share these yummy treats with you. I'm a huge pudding pop fan. When I was growing up it was a real treat when mom picked them up at the grocery store. My favorite's the vanilla and chocolate swirled. When I found this recipe on the Skippy website I knew my kids would love them. They love pudding and peanut butter, so why not mix them and freeze them for a great treat. I was definitely right. My kids thought these were great. These pops also last a lot longer and are more filling than regular pudding pops because of the peanut butter. My kids licked and licked these and not one of them could finish their pop. I just stuck them in another wax cup, put the foil on the top and stuck in back in the freezer for later. Adults enjoy these too!
FROZEN PEANUTTY PUDDING POPS
1/2 cup creamy peanut butter
1 box instant chocolate or vanilla pudding (regular box)
2 cups cold milk

Blend all ingredients in a medium bowl with a wire whisk. Spoon pudding mixture into 4 oz wax coated paper cups or muffin pan lined with cupcake liners. Place a piece of foil over the top and using a knife, slice a small hole in center. Place a plastic spoon or wooden ice pop stick into the slit. The foil holds the spoon or stick in place. Freeze 4 hours or until firm. To serve, peel off paper cups or cupcake liners. 6 servings.

My little boy is a peanut butter fanatic! He could seriously eat peanut butter sandwiches for EVERY meal, so I'm sure he'll love these!!

Since you are the popsicle lady, maybe you can help me (?). When my kids were little, I made them popsciles out of peanut butter, banana and they had mini chocolate chips in the bottom of the cup......do you have that recipe? I can't find it anymore.

Coleen- I've never heard of these, but if you find the recipe let me know! I will keep my eyes peeled when I'm looking through recipes. I have a collection of older cookbooks that I drag out every once in a while to look through.
