Brad and I have been an item for almost 15 years now (married 8 1/2) and I didn't know he liked butterscotch. Can you believe it...and I thought I knew him! I love butterscotch, but haven't made anything with it because I thought he didn't. Our poor, deprived children had never eaten butterscotch before. What kind of mother am I? I would like to report they all adored it. Chase did. I baked the cookies yesterday afternoon and he woke up from his nap to a table full of cookies. His little eyes lit up and he dug right in. Sophie is stubborn and she still hasn't tried one. She ate some butterscotch chips and said she liked them, but for some reason is acting like I put poisoning in the cookies. Makayla is a picky eater, except with her sweets. She normally chows down on anything cookie, cake, or candy. She came into the house after school to do her homework and saw the table covered with cookies. Her little eyes lit up... and then I told her what kind they were. She sat at the table doing her homework with a cookie setting beside her. She acted like that cookie was bomb getting ready to explode at any minute. Who knew that a yummy little butterscotch cookie could be so scary. The girls "think" they're going to be gross, so they won't even try them. Maybe I can use it to my advantage. The next time they're arguing I can threaten them with cookies. Have you ever heard anyone say, "If you don't straighten up you have to eat a cookie!" ??? Now, that's my kind of punishment :)
OATMEAL BUTTERSCOTCH COOKIES
3/4 (1 1/2 sticks) butter or margarine, softened
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1 tsp vanilla
1 1/4 cup flour
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
3 cups quick cooking or rolled oats
1 3/4 cups butterscotch chips
Heat oven to 375. Beat butter, sugar and brown sugar in a large bowl until well blended. Add eggs and vanilla; beat well. Combine flour, baking soda, cinnamon and salt; gradually add to butter mixture, beating well until blended. Stir in oats and butterscotch chips; mix well. Drop by heaping teaspoons onto ungreased cookie sheet. Bake 8 - 10 minutes or until golden brown. Cool on cookie sheet 3 minutes before removing. Makes about 4 dozen.
