Onion Rice

While looking back on my posts I noticed I didn't have very many side dishes. Maybe it's because I tend to make the same boring old sides over and over. I figure you guys already know how to make mashed or baked potatoes and I'm pretty boring about my veggies just being steamed or roasted. I actually made this rice a while back and had forgot to post it. I'm glad I ran across it because it was very easy, cheap, and yummy! The picture looks kind of yucky because all I had that night was a red onion and it would look nicer with a white one (the red one tasted good though!) I found this great recipe on allrecipes.com. If you aren't familiar with that site you need to check it out. I'm sure will find some great recipes!

ONION RICE
1 tablespoon vegetable oil
1 red onion, chopped
1 cup long-grain white rice
1 teaspoon ground black pepper
2 cups chicken broth


Heat the oil in a saucepan over medium heat. Stir in the onion, and cook until almost tender. Stir in rice, and continue cooking until coated with oil. When onion is tender and rice begins to brown lightly, season with pepper, and pour in the broth. Bring to a boil. Reduce heat to low, cover, and simmer 20 minutes.

Yum, my family loves rice. I usually just make rice pilaf so this will be a nice change!
