Oven Kalau Pork

One word can describe this recipe... YUMMY!! I've never been to a luau, so I don't know if it can be compared to the pork served at one, but I do know it's mighty tasty. We all really enjoy it. Sophie ate 3 huge helpings of it and Chase cleaned it off his plate too. Brad ate his on a bun with bbq sauce. This oven kalau pork is super simple. You put it in the oven and forget about it. The most time consuming part was shredding it after it was cooked. At less than 50 cents per serving this was an exceptional dish.

OVEN KALAU PORK
5 pounds pork butt roast
1 TBSP liquid smoke flavoring, plus 1/2 tsp
2 1/2 TBSP sea salt, divided

Preheat oven to 325. Rub liquid smoke and 1 1/2 TBSP of salt onto the skin of the pork. Wrap well in foil, and seal completely. Place in roasting pan. Bake 5 hours (or until internal temperature of 160 is reached). Remove from oven and let cool 15 minutes before shredding. Sprinkle shredded meat with remaining 1 TBSP of salt and 1/2 tsp liquid smoke. Mix well. 12 servings.
