Stuffed Pepper Soup

I found this recipe the other day and had to make it. I didn't think Brad would like it because he isn't fond of soup, so I made it for lunch. It was really good. I liked that the green pepper wasn't overpowering. I didn't have 2 cans of plain diced tomatoes, so I had to use 1 can of plain and 1 can of tomatoes with basil, garlic and oregano. The only problem I found, which really isn't a big deal, is the rice absorbs the liquid and if you eat if for leftovers it isn't soup anymore... but it's still tasty :)


STUFFED PEPPER SOUP
1 lb. ground beef or turkey
1 green pepper chopped
1 large onion chopped
1 clove garlic minced
2 cans diced tomato
2 cans tomato sauce
1 can chickenor beef broth
1/4 tsp thyme
1/8 tsp ground sage
1 cup cooked riced
salt and pepper to taste


Brown ground meat and onion; drain. Add green pepper, garlic, tomato, tomato sauce, broth and seasonings. Cover and simmer 30-45 minutes or until pepper is soft. Add cooked rice and mix well.

Girl, this reminds me of the Jambalaya I make. I use sausage for that though. I think I'm gonna post a recipe for that soon.

Yummy Heidi, I just made stuffed peppers last week i need to add it still. This looks so good and a nice change from the original stuffed pepper. My dh only eats the inside so he would like this dish. Me I eat the whole darn thing.

Cook the rice in a seperate pot, then add to the soup
