I've been excited for days wanting to try white chili. I'd heard of it, but never had it. If you've never had it, your really missing out. I loved this white chili. Chase and my mom liked this too, but my husband (the wimp) thought it was to spicy. I pictured it without toppings, but if you crush up some tortilla chips and sprinkle it with cheese and sour cream it cuts the spiciness. I didn't think it was spicy at all, but my mom also said she thought it was a little spicy. Apparently my spicy-meter is higher than theirs! At about 77 cents per serving, I can't wait to make this again... for me, for lunch since someone in the family is a wimp!
WHITE CHILI
1/2 onion, chopped
2-3 TBSP olive oil
1 small can diced green chili's
2 cans (15 oz) Great Northern Beans, rinsed and drained
2 cans (15 oz) Great Northern Beans, rinsed and drained
2 1/2 cups chicken broth
1/4 tsp cayenne pepper
1 tsp garlic powder
1/2 tsp salt
1 tsp cumin
1 tsp oregano
1-2 cups shredded, cooked chicken
Saute onion in olive oil until tender. Add green chili's and saute 2-3 minutes more. Add broth, seasonings, beans and chicken. Simmer 15-20 minutes. Serve with shredded cheese, sour cream and tortilla chips. 4-6 servings
