I have a confession to make. Don't tell anyone, but I'm addicted to recipes. I know it's shameful. I should be cleaning and doing laundry, but instead I'm spending entirely to much time scouring the internet and cook books for recipes. I found this recipe for Li'l Cheddar Meat Loaves while looking on the Taste of Home website. I like reading the Taste of Home cookbooks at the checkout counter while I'm waiting to put my stuff on the conveyor belt at the grocery store. If a recipe strikes my fancy I write the name down on my grocery list and then look it up on the website when I get home. I think that may be considered cheating... I'm sorry Taste of Home, but I do subscribe to 3 of your publications and am paying you enough money! This was a recipe I wasn't even looking for. It was one that popped up along the side as one I might like to try. I clicked on it and it had 74 good reviews, so I knew it had to be good. I was right. These yummy little loaves are moist and tangy, but sweet. They're also a lot faster than traditional meat loaf because they cook in only 25 minutes! If you really wanted you could make one big meatloaf, but these small ones are so fun :) At only 65 cents per meat loaf, I would consider these tasty little babies a steal. I will definitely be making these again. They're simple and delicious!

LI'L CHEDDAR MEAT LOAVES
1 egg
3/4 cup milk
1 cup shredded cheddar cheese
1/2 cup quick-cooking oats
1/2 cup chopped onion
1/2 tsp salt
1 pound ground beef
2/3 cup ketchup
1/2 cup Brown Sugar
1-1/2 tsp prepared mustard
3/4 cup milk

In a large bowl, whisk egg and milk. Stir in the cheese, oats, onion and salt. Crumble beef over mixture and mix well. Shape into eight loaves; place in a greased 13-in. x 9-in. baking dish. In a small bowl, combine the ketchup, brown sugar and mustard; spoon over loaves. Bake, uncovered, at 350° for 25-30 minutes.

I made these for sunday dinner and everyone loved them. I ate the leftover ones the next day for lunch. thanks for the recipe it was quick and easy .
