Who doesn't like a good old Oreo cookie? I remember getting into so much trouble when I was little and got into the cookie jar at Grandma's. Oreo cookies were my Grandpa Lewis' favorite. I don't remember much about him because he died when I was 12 from emphysema. My entire life he was sick, on oxygen and in bed. I do remember sneaking in the cookie jar just to eat the cream out of his cookies and leaving the chocolate part. I don't think grandpa was to happy when he was left with only the chocolate cookie part that had already been licked! As I got older I learned to appreciate the entire Oreo cookie. You learn the cookie part's great dipped in milk. I also learned while I was pregnant with Chase they're great with a big glob of peanut butter on top. Sounds gross, but try it! I found this recipe on several different sites, but printed off the version I found at Recipe Shoebox. If you haven't already, click over and check it out. Lara has great recipes posted. I can't wait to try out the rest I printed off. I halved this recipe because I wasn't sure how many it would make. I ended up with about 25 completed cookies. They were very easy to make and everyone really enjoyed them. Chase keeps asking me for the cakesters (they're similar to Oreo Cakesters because they're soft). These are another great way to use a cake mix for something other than a cake :)
SOFT OREO COOKIES
Cookie
2 chocolate cake mixes (dry)
1 cup butter
4 eggs
Filling
1 pkg. (8 oz) cream cheese
1 3/4 cups powdered sugar
1/2 tsp vanilla
2 TBSP butter
Combine cake mixes, butter and eggs. Roll into small evenly sized balls. Place onto very lightly greased cookie sheet. Bake at 350 for 6-8 minutes. In a med. bowl beat cream cheese, vanilla and butter. Slowly beat in powdered sugar until smooth. Spread onto 1/2 of the cookies and top with the other 1/2. Enjoy!
