Cake Balls/Pops

I'm a huge Pioneer Woman fan and a while back she teamed up with Bakerella to make some adorable cake pops that looked like cupcakes. When I saw them I thought they would be perfect for Makayla's Spring party. While they looked nothing like the perfect cupcake cake pops pictured on the Pioneer Woman's site, I think they turned out well. I made enough cake pops for the kids in the class and made cake balls with the rest of the cake and candy coating for home. I'm not going to lie. The cake balls are a MILLION times easier than wrestling with the cake pops. It was about midnight when I made these last Thursday night and I almost started crying. I sat the finished cake pops in a cup to dry because I didn't want to lay them down. I had 5 drying in each cup. I took the first one out of the cup to wrap in plastic and the cup fell over breaking 3 of them. Luckily I pushed them back together and you couldn't tell. There was only one causality. The kids in the class acted like they really enjoyed these. My kids loved them... Brad and Aunt Connie were lucky enough to get some and really enjoyed them too. They didn't last long! While at the school party I receive the very best compliment from my friend Lori Beth, who's daughter Baylea's in Makayla's class and we're the room mothers. She told me she was addicted to my blog along with her sister. She said they check in every day to see what I have cooked. Thank you so much Lori and her sister (I'm not sure if she's talking about Samantha or Bobbie Jo). You made my day!


CAKE BALLS/POPS
1 boxed cake mix, any flavor, baked according to package directions in 9 x 13 pan
1 can icing (16 oz), any flavor (I only used 3/4 of the can)
candy coating (about 3 oz)
Using a fork, crumble completely cooled cake. Add icing and mix well. The icing will completely blend into the cake. Form into balls using a melon baller (or your hands if you don't have one). Place balls on a cookie sheet and place in freezer for 15 minutes. Melt candy coating. Using a toothpick, dip balls into candy coating. Place on wax paper to set.

I made something very similar to this with Oreo crumbs and cream cheese instead of frosting and served them at a party. I was asked the recipe for them several times and no one could believe how easy they were. Yours turned out beautifully!
