Shredded Beef Au Jus

I'm a little heavy hearted this morning. Sophie started summer school today as a brand new kindergartner. I let her ride the bus and then drove to the school and walked her to her room. I feel terrible because I had to leave her crying. She wanted to go home with me. This is my first experience with a crier because Makayla was excited when I left her that first day. I wish I could have talked Makayla into going because if Sophie knew her sister was at school too and could play with her at recess, she might not be so upset. I cannot wait until 3:25 when she will be home. Without her here this morning I feel like I'm missing something. I've lost another child to the dreaded school. Doesn't she look pretty? The picture was while she was still excited to be going... before the crying!
Enough whining... I found the recipe for these delightful sandwiches in the newest issue of Taste of Home. It's one of the recipes featured in the section where a reader shares one of their mothers best meals. I have found a lot of great recipes in this section. Moms tend to be great cooks :) This is a great slow cooker meal. It smelled so good cooking. Brad kept snacking all afternoon because he said the smell from the slow cooker was making him hungry! This beef turned out tender and very flavorful. Picky Makayla wouldn't try it, of course, but Sophie and Chase couldn't get enough. The only change was I omitted the rosemary because I didn't have any. Each sandwich only cost about 92 cents. This is a keeper!
SHREDDED BEEF AU JUS
1 boneless beef chuck roast (3 pounds)
2 cups water
2 tsp beef bouillon granules
1-1/2 tsp dried oregano
1 tsp garlic salt
1 tsp seasoned salt
1/4 tsp dried rosemary, crushed
8 hamburger buns, split
Cut roast in half and place in a 4- or 5-qt. slow cooker. Combine the water, bouillon granules and seasonings; pour over the beef. Cover and cook on low for 6-8 hours or until meat is tender. Remove beef; cool slightly. Meanwhile, skim fat from the cooking liquid. Shred meat with two forks; return to the cooking liquid and heat through. Using a slotted spoon, place 1/2 cup on each bun. Serve with additional cooking liquid on the side. 8 servings.

I know exactly how you feel, Heidi. My son cried and wanted to go home with me every day for the first two weeks of preschool. I could hear him screaming "Mommy, please don't go" all the way down the hall. It was soooo hard. He's 16 now and doesn't even remember it! Hang in there, I'm sure you're feeling much worse than Sophie is. She's probably playing and having fun at school. Oh the joys of being a mom!

My heart breaks for you--I'm sure that's so unbelievably difficult having to leave your child...let alone when they're crying! My son starts preschool this Fall, which I'm having a difficult enough time dealing with--I'm sure Kindergarten will really do me in!

The sandwiches look wonderful! My family makes a shredded beef recipe in the crockpot, but it's completely different from this--I'll be anxious to try something new!

Big hugs from one mom to another! I do not look forward to the first day of school, it gets me teary just thinking about it! I'm sure after no time she'll love it, and she looks so cute!

We LOVE au jus at our house, but I've never made it from scratch, just from the little packets, I can't wait to try this!

My little girl will start school in a couple years - I don't know whether I feel more relieved that it will be quieter at home or nervous to send my first child to school for the first time. I guess it's a bit of both.

The sandwich looks delicious. I love tender, slow cooked meat.

I remember well the first day of Kinder and leaving my daughter and that was 22 years ago! I used to give her 100's of kisses in her hands and she would put them in her pocket to be pulled out whenever she needed a kiss from Mom.

Summer school?! That does stink if you ask me! At least she's adorable going off for her first day. Hopefully soon she'll be begging to go each day.

My little guy starts kindergarten in September (and by little guy, I mean my oldest) so I know I'll probably have a tear or two. Are you on year round schooling? I've never heard of summer school for starting kindergarten before. (She's very cute btw)
The beef recipe looks like one we need to try out, I love a good beef sandwich!

Oh man. That's got to be rough! My oldest is eligible for kindegarten in the fall, but her b-day is only a few days before the cut off, so we're keeping her in pre-K next year. Part of me is jumping for joy. I'm not ready to let her go yet.

Sophie looks beautiful. Hopefully she had a good day.

Oh and the beef...yummy! I love beef in au jus and I love a good crock pot recipe. Good choice!
