Here's one of my family's favorite tried-and-true recipes. I've been making it for years. My husband and kids love it and it always gets a lot of recipe requests when I serve it to guests. I love the fact it looks like you went to a lot of fuss, but it's SUPER-DUPER EASY!! I originally found the recipe in Quick Cooking magazine (now Simple & Delicious). I still haven't got a clue why they changed the name of the magazine... how confusing. I needed something fast for dinner and this fit the bill. Brad called me at work today and told me he made Sophie a doctor's appointment. She was playing outside Saturday and got a case of misquito-gone-wild in her panties. Saturday night she had her hands down her pants going crazy scratching when I decided to see what the problem was. Well, her little girly parts were swollen and purple. I doctored her up and she was a lot better Sunday morning. My mom kept her last night and when she saw the chigger bite this morning she brought her to work for me to see. I tried to tell her it looked a million times better, but she brought her home and told Brad and he insisted she go to the doctor. Needless to say, I took off work 30 minutes early and accompanied them to the doctor. They're having me put some fancy cream on her. By the time we got home I needed something fast and easy, so this was perfect. I love the fact it's stuffed with string cheese. The ricotta stuffed manicotti's great, but this wins the blue ribbon with my kids. I would highly recommend this one! Enjoy... we did :)
EASY-TO-STUFF MANICOTTI
1 package (8 oz) manicotti shells
1 pound ground beef
1/2 cup chopped onion
1 jar spaghetti sauce
14 pieces string cheese
1 - 2 cups shredded mozzarella
Cook manicotti according to package directions. Meanwhile brown and drain beef and onions. Stir in sauce. Spread 1/2 of meat sauce into greased 9x13 baking dish. Drain noodles. Stuff each with a piece of string cheese. Place stuffed shells on top of meat sauce and cover with remaining meat sauce. Cover and bake 25 minutes at 350. Uncover, sprinkle with mozzarella and bake an additional 5 - 10 minutes, or until cheese is melty.

I LOVE your idea for manicotti. String cheese. I wouldn't have thought of that, but it sounds perfect, and so easy! I know my kids would eat it.
Funny story to tell... same thing happened to my brother when he was about four. Well, my mom is very "proper" and taught my little brother to use proper names for his boy-parts. Well, he got into some chiggars and they got him all over. He would point to each very swollen bite and call them balls. Well, the worst of it was in his underware area and it was swollen really bad. When my mom took him to the doctor, the nurse asked to see the worst of it and my brother asked if she wanted to see his balls!!! The nurse was mortified and so was my mom!!! Poor thing, she really got the wrong idea!!! We still tease him about it today!
Hope little Sophie is doing well. I work for a large hospital, and I believe it's always better to err on the side of caution. Glad she went to see the doctor.
Your manicotti looks great...I just love quick meals...especially when they have anything to do with pasta!!
The manicotti looks delicious! You can't go wrong with pasta, cheese and sauce. Not in my book, anyway!
This recipe is great for me right now. I was going through my almost bare cupboards and I found Manicotti Shells. I was wondering how to put them to good use.
