Grilled Egg and Cheese Sandwhich

Since I'm now Mrs. Working Mom I find I'm tired when I get home and have to rush to get supper on the table. I got home today and realized I forgot to put anything in the fridge to thaw, so I had to improvise. I remembered last week Krista at Krista's Kitchen posted an easy recipe for a grilled egg and cheese sandwich. I quickly dug out the recipe (which I didn't really need because it's basically a grilled cheese with an egg cooked to your liking added in the mix) and whipped these babies up speedy-quick. I cannot believe I've never made these sandwich's before. Everyone loved them... except Miss Picky Pants who won't try any eggs except deviled eggs. They couldn't be any simpler. Thanks Krista!

GRILLED EGG AND CHEESE SANDWICH
eggs
cheese
butter
bread

Cook and egg to your liking (Brad and Chase like runny eggs, but I like them hard-cooked). Set aside. Butter one side of your bread slices. Place butter side down on a skillet pre-heated over medium. Top with cheese. When cheese melts and bread's desired brownness top with egg and another slice of bread with butter side up. Flip and cook until the other side's desired brownness. Basically just make a grilled cheese with an egg thrown in. Couldn't be easier!

This looks SO much better than a plain old grilled cheese (which incidentally is totally my fall-back desperation meal). Next time I'm adding the eggs. Thanks for a great idea!

This sammy is an excellent idea and similar to one that we eat as well. I make mine more like I see in some Italian sub shops, adding red or green peppers to it as well. I love egg sandwiches, even eat them for breakfast.

I hear you about being the juggling act between working outside and then inside the home. You're doing swell!
