Crunchy Chicken Legs


After a wild night of partying I just didn't get around to posting these chicken bones (as Sophie calls them) last night. Ok, so that's not the complete truth. I did attend a party, but it would be a matter of opinion how wild it was. My cousin Amy turned 30 and her kids had a surprise party for her. The only thing wild I saw at the party was the preteens and little kids dancing and playing limbo. My kids had a blast (minus Chase who was in a mood and wouldn't play with anyone). The party was kind of bittersweet for me. My cousin and I've shared quite a history. We've been the very best friends and the worst enemies growing up. We grew up a block away from each other and I think when two people are together all the time they're bound to disagree. I can honestly say she knows the real me better than any one else. The past 8 years we haven't not gotten along, but I guess we have just grown apart. She's teacher with three absolutely gorgeous kids I'm sorry to say I don't even really know. That was the bittersweet part. I felt proud of her. She's successful and beautiful and I felt out of place because I'm not part of that. I know her, but I don't and that makes me sad. Enough depressing posting.... the chicken legs were really good! They're moist and tangy because of the dressing and have a nice crunch to them. I haven't made them in a few years and they were a nice change. I'm glad I remembered them. Brad said they hit the spot. I'll take that compliment and run because he doesn't give them often :)


CRUNCHY CHICKEN LEGS
1 cup crushed corn flakes
1/2 - 3/4 cup Italian dressing
1/2 tsp salt
1/2 tsp pepper
chicken legs (this is enough to do about 10)
Rub dressing onto chicken legs. Dip legs into crushed cornflakes, covering completely. Place onto lightly greased baking sheet. Bake at 400 for 1 - 1 1/2 hours. Turn halfway through cooking time to ensure both sides are crunchy.

mm these sounds fantastic! I secretly love fried chicken but can never get the baked diy versons right but I have heard corn flakes is the way to go, I'll have to try it!

I grew up right next to my cousins and it's kind of the same for us. We know what each other are up to these days, but we don't see each other except for family dinners or once in a blue moon in between. It is a little sad considering how close we all were growing up.

Your chicken looks yummy! Gotta love oven fried chicken!

Yummy chicken! Perfectly crisp. Mine never quite turns out this way. :0(

I think we all have a relationship like that with someone..you were super close at once,knowing everything there is to know about eachother and then a few years or more down the road you feel like a stranger to them. I have that same relationship..only it's with my mom..wich is totally sad in a whole other way..lol

We love chicken in our house..this recipe is a keeper!!

I have a very similar relationship with my siblings. Two of them live within 50 miles of me but I haven't seen them in years. No hard feelings, just not a lot in common I guess. The chicken looks delicious!!

As sad as it is to lose touch with an old friend (or cousin) I think the older we get the more naturally we focus in on our own children and immediate community. My mom is now closer to her cousins than she's been in ages now that we're all grown and gone.

Your chicken legs look perfectly crispy and tender. Yum!

I was the best of friends with my cousin before getting married. Since then we rarely talk and we get together we don't really have much to talk about...very awkward setting.

I started reading your post and said look at Heidi she is quite the party girl LOL I would of never guessed!!! Then i read more into the post. You sound like me a bunch of kiddos and its a party. Sometimes friends grow apart it just happens. the chicken legs look good, I still need to make the wasy peasy ones.

The chicken legs sound very tasty, and for me it's ingredients I often have on hand, so I will be making this soon.

It's difficult to rekindle old friendships. I think the best way to approach the situation is as if you were meeting her for the first time and letting the relationship and friendship build. You cannot go back, but you can move forward. And if both of you are willing to let past hurt and misunderstandings stay in the past and forgive them with love, then you will be friends again. Give her time. I think she may be a little uneasy around you as well, because you are equally as beautiful, both inside and out.
