Easy Peasy Pimiento Cheesy

I know you're probably thinking I've done lost my marbles for posting a recipe as simple as pimiento cheese sandwiches. I grew up eating these and we really enjoy them for a quick lunch or supper. I do know some people have eaten, but never made this dish, so I'm hoping to catch at least one of them! I like putting a slice of fresh tomato on my pimiento cheese sandwich. Tonight I walked on the wild side and put a little smoked turkey on it too. It was really yummy! I hope you enjoy :)

EASY PEASY PIMIENTO CHEESY
2- 2 1/2 cups shredded cheese (I like colby/jack or cheddar)
1 cup mayo
1 jar chopped pimiento (I used the 2 oz jar but usually by the larger one)
1/2 tsp salt
1/4 tsp pepper

Mix and enjoy!

Personally, I greatly enjoy seeing these kinds of recipes. So many of the older, family recipes are being lost and forgotten. It's good to be able to find a recipe like this on the web. I had the dickens of a time some while back trying to find those little cucumber sandwiches made on cocktail bread and another time I was trying to find that old spinach and chipped beef and sour cream dip recipe. It took some doing but I was grateful to the people who thought it wasn't interesting enough to post. It was interesting to me and it was certainly a recipe I needed and was grateful to find. Keep posting. Now see, I had forgotten all about your recipe and I want to revisit it again. Thanks for sharing and bringing back a good food memory!

What is pimiento? Is that what green olives are stuffed with? I recently saw a Paula Deen recipe that called for pimiento. Would you please tell me what it tastes like? Thanks!

Your sandwiches look very nice and yes simple! I adore simplicity in the kitchen...they remind me of my childhood days~and I believe that at times...great simplistic GOODNESS, can win the game everytime.

I have never actually made pimento sandwiches but I have eaten them when they were already made. I love them but I just never thought to actually make them since I always buy it premade from the grocery store. Thanks for the recipe! Now I can make my own.
Thanks for posting this recipe. My sister loves the pimento cheese in a jar from Kraft. She'll think I'm amazing when I can share the recipe with her.

Chicago Mom- A pimiento is a small sweet red pepper, similar to, but more flavorful than, a bell pepper. They come in a small clear glass jar down the canned vegetable isle at our grocery store.

This actually sounds really good. I think my grandparents made this for me one year while I was back east visiting them. I think I will have to try this soon.

I think this pimento cheese spread sounds yummy! I like mine on crackers, but I bet it'd would make a fine lunch between a couple slices of bread. Good recipe!

i was recently informed that pimento cheese sandwhiches are a regional thing and some people *gasp* have never heard of them when i was talking about them recently as they were being featured on diners, driveins, and dives on the food network. they may be simple, but they are perfect summertime treat. he was stuffing pimento cheese into everything. i still like the tried and true on white bread though.

I've only ever had the premixed kind and thought it was yucky...but this looks really good!
