I'm probably crazy for even posting this one. I'm sure everyone knows how to make fried zucchini. This is a tried-and-true favorite my grandma taught my mom who taught me... and you never know, there may be at least one person who has never had fried zucchini and gets inspired to make it (if this is you I'm describing you must try this immediately!) I got my very first zucchini out of the garden and my husband couldn't wait for me to fry him up some. I can't think of very many things better than the first batch of fried zucchini of the year. It melts in your mouth.... while clogging your arteries, but that's beside the point! I also have an amazing zucchini bread recipe I will be sharing with you very soon. This bread's so good my grandma even asked for the recipe :)
FRIED ZUCCHINI
1 small - medium zucchini thinly sliced
3 eggs slightly beaten
2 cups flour seasoned to taste with salt and pepper
oil
Fill skillet with 1/4 inch of oil. Heat to about 350. While oil is heating dip your zucchini slices in eggs and then into flour. Shake off excess flour and place in hot oil. Brown lightly on one side (3-5 minutes) and then flip and lightly brown the other side. Drain on paper towels and sprinkle with a little salt while they are still hot. Enjoy!
