Lemon Bars

Today's going to have to be a quick post. I'm looking at 20 heads of lettuce, 30 pounds of tomatoes and 15 pounds of onions... all of which have to be chopped tonight by me. Tomorrow's the big day. It's our towns tractor pull and I'm in charge of the concession stand for the 4th year. Luckily I got all the chili and taco meat cooked a few days ago. It will be a long day. I have to get it set up and going before noon. I will be there until the last tractor pulls... some years that's 2:00 AM. I will leave you with a wonderful lemon bar I found over at Bakerella. She's got a great blog and I have such fun looking at her wonderful desserts :)

LEMON BARS
Crust
1 cup butter
1 3/4 cup flour
2/3 cup confectioner's sugar (plus more for dusting)
Topping
1 1/2 cup plain sugar1
/4 cup flour
1 tsp baking powder
4 eggs, slightly beaten
1/2 cup lemon juice

Preheat oven to 350.Grease and flour a 9 x 13 pan. To make crust- In a medium bowl, whisk together flour and confectioner's sugar. Cut in butter until combined and crumbly. Press mixture into bottom of pan. Bake for 20 minutes or until golden.To make topping- While crust is baking, prepare topping. In a larger bowl, add sugar, flour, and baking powder. Then add slightly beaten eggs and lemon juice. Mix well and pour on top of warm baked crust. Bake for 20-25 minutes.
When cool, dust with confectioner's sugar and refrigerate.

These are yummy looking lemon bars- I love citrus in the summer!

I have always wanted to make lemon bars. These look so yummy!

Your town's Tractor Pull sound like a blast!

I am going to have to try your recipe later this week. I didn't have all of the ingredients and my hamburger is still frozen. :0(

Those are yummy looking bars. I am so jealous Heidi!! I wish I lived in a small town So I could to those fun events like the tractor pull. That is such small town fun I love it! Let us know how it goes. Food and fun it doesnt get any better.

I have made those lemon bars several times since finding them at Bakerella; they are addictive! How did the tractor pull go? Good, I hope!

The lemon bars look so light, you would think they will float away.
