A few days ago was my best and oldest friend Tasha's birthday... OK that sounds wrong! I don't mean oldest as in age (she's only 29), I mean oldest as in we've been friends since we were in diapers. Good thing she doesn't have the internet or she would be mad at that comment! Growing up we were always together. She's only about 5 months 0lder than me, but she was a grade above me in school. I remember thinking the world would end when she got to go to Kindergarten and leave me behind. The bus stop was between our houses and I would go in the morning when she got on the bus and cry and cry. Even now not many days go by where we don't at least talk on the phone... she only lives a few blocks away. She's an in-home childcare provider and is use to being able to talk to me on the phone during the day. Now that I work she teases she's having with drawls from not being able to talk to me during the day! I couldn't afford to buy her a nice fancy gift this year, so I gave her an ugly birdhouse clock and offered to make her anything she wanted. She said she would like a chocolate pie, but not to go to any trouble. I was trying to figure out what to make when I spotted a post for this pie at taste buds. I had everything on hand to make it, so I whipped it up. I can't tell you how easy this pie is! It's ridiculously easy. Unfortunately I didn't get to taste the finished frozen product... only the filling when I licked out the bowl. Tasha called me the next day upset I had went to so much trouble on her pie. She said it was delicious. It can be our secret just how easy it was to make!
SYMPHONY PIE
1 giant milk chocolate Symphony bar
1 pre-made graham cracker crust
1 8oz tub cool whip
1/4 cup water
Break up candy bar into small pieces and melt with 1/4 cup water in microwave for about 30 seconds. Stir until smooth and let set to cool about 10 minutes. Fold in cool whip and put in crust. Freeze for a couple hours before serving. I topped mine with a dollop of cool whip and chocolate shavings.
