Chili Casserole

Where has summer gone? I can't believe it's already time for school to begin. My girls are almost ready. I need to finish up buying school supplies and shoes. Sophie got a letter from her teacher today and it makes me so sad thinking about how time flies! Before I know it little Chase will be in school too. I will begin the school year as substitute custodian working 12:30-4:30 and will need quick easy meals. This chili casserole I found over at Kara's Kitchen fits the bill. This crunchy, cheesy casserole's great. It also reheats really well as leftovers...and it's taco-ish :)

CHILI CASSEROLE
1 pound hamburger
1 onion, chopped
1 packet chili seasoning mix
8 oz tomato sauce
1/2 cup water
2 cans pinto beans, drained
1 can sliced olives
1 1/2-2 cups grated cheddar cheese
1 cup Fritos corn chips

Brown and drain hamburger. Add onion, chili seasoning, tomato sauce, and water. Simmer, uncovered, for 10 minutes. In a 2 qt casserole dish, layer half of the meat, beans, olives, and cheese. Repeat layers, ending with chips and cheese. Cover with foil and bake at 350 for 25 minutes. Remove cover and bake for 5 minutes or till crispy on top.

We eat our chili with fritos and cheese, too! The only other thing I add is a little sour cream on top.

This does sound taco-ish, doesn't it; love that! We enjoy tacos here so this would be a hit. Will have to do this when I don't feel like fussing with the shells and all. Gotta to buy some fritos!

I seriously can't believe it's time for kids to start going back to school! All of my girlfriends' kids have already started back--I seem to remember starting the end of August when we were little!

Your chili casserole looks like it would be the most perfect meal, especially with Fall approaching! I was just telling my husband the other day that I couldn't wait for the weather to cool off a bit so I could get myself psyched to start making chili, beef stew, soups, etc!

Mmmm, my kind of comfort food! Warm, cheesy, and a little spicy. :-)

My kids aren't in school yet, but the thought of school and fall makes me ready to get back to comfort-food-casserole-hearty-type food cooking! Don't do as much of that in the warm summer months!
