Sneaky Moms Chocolate Chip Zucchini Bars

I can't believe tomorrow's the first day of school. My girls are so excited, but I'm sad thinking about my little Sophie already being old enough to go. This is her teachers first year with Kindergarten and I hope Sophie doesn't put her into early retirement! Lord only knows what my little worm will tell her. During summer school I told Sophie not to put her mouth directly onto the water fountain and somehow that got switched around to Sophie telling the teacher her mom said she couldn't drink out of water fountains! I'm not worried about Makayla. Going into second grade she knows what to expect and what's expected of her. Fortunately for me I will be there to spy on them. I will be a sub from 10:30-4:30 (much better than my summer hours of 6-4). Custodial work's not my life dream, but I'm very excited to be lucky enough to have a job where I can be around my kids (and kids in general for that matter). I know the girls are excited about ol' mom knowing if they get in trouble :) Now, onto the food. Thank you Kim at But Mama, I'm Hungry for this great recipe. These sneaky bars are every moms dream. They're moist and delicious and taste a lot like a regular chocolate chip cookie bar. The texture's slightly more spongy, but equally as yummy. What a great way to get veggies down the kids! They'll never know... unless you tell them.

SNEAKY MOMS CHOCOLATE CHIP ZUCCHINI BARS
¾ cup butter, softened
¾ cup brown sugar
2 eggs
1 tsp vanilla
2 cups zucchini, peeled and grated
1 ¾ cups flour
½ tsp salt
1 ½ tsp baking powder
2 cups chocolate chips

Preheat oven to 350. Using an electric mixer, cream the butter, sugar and eggs together. Add the vanilla and zucchini and mix well. Add the flour, salt and baking powder mixing well. Finally, add in the chocolate chips and mix until just combined. Pour into a greased 9x13 inch cake pan and bake for 35 - 40 minutes or until a toothpick comes out clean. Let cool and cut into bars. Enjoy!

I have to admit am in full panic mode about my oldest taking the bus to kindergarten. I am getting more anxious by the day. If they only knew the thoughts we have. These look awesome. I love tryin g to sneak things past them, and this might actually work.

I'm so glad that you tried them! I made them again the other day and used medium eggs instead of my normal large, and they were even better with the medium sized eggs! Less spongy! My son is starting preschool and they will be picking him up on the bus, I'm so SCARED!! AHHH!!

LOL, I'd love to be a fly on the wall at my children's school especially the Twins'! I'm pretty certain that at 13 they'd hate it. Girls, the girls are very aggressive and my guys are NOT allowed to date.

I still haven't baked with zucchini. :( This looks like a terrific recipe to start with! Thanks for sharing!

The bars look delicious. Did you refrigerate them?

My kids go back to school on Sept. 8, and I hate thinking about it! My daughter had a terrible year when she was in first grade, and I haven't been able to shake the worried feeling every year since. She'll be in 4th grade this year and I still worry about how things are going when she's at school!
Isn't this one great? My son was actually after me to get more zucchini!
