Strawberry & Cream Cake for Chase's 3rd Birthday


Three years ago today I had my 10 lb 11 oz baby boy. Three years have flown by. He's such a sweety. Chase cracks me up. Last night I was baking his cake and he came up behind me and asked why he had socks in his pocket. I turned around to find him with his white pocket lining hanging out! He thought his pocket lining was a sock :) Chase requested a strawberry cake that looked like Caillou. If you don't know who Caillou is, he's a four year old little bald boy on PBS sprout. I have to admit, it's a cute little show... I would just like to know why he's bald. Everyone else on the show has hair. Anyways, I found the perfect recipe a few weeks ago on Delectable Dining. Thanks Sarah! Everyone loved it.

STRAWBERRY & CREAM CAKE
Cake
1 package white cake mix
3 egg whites
1/3 cup vegetable oil
1 1/4 cups strawberry soda
Cream cheese frosting, recipe follows

Preheat the oven to 350. Grease 2 8 inch round cake pans. Prepare cake mix as directed, with the egg whites, the oil, and substituting the soda for the water. Pour into prepared pans. Bake as directed on the box and cool completely before frosting.

Frosting
1- 8 ounce package of cream cheese, softened
1 TBSP
1 tsp vanilla extract
4 cups powdered sugar
food coloring (optional)

In a large mixing bowl, beat cream cheese, milk, vanilla, and food coloring with an electric mixer on low speed until smooth. Gradually beat in powdered sugar, 1 cup at a time until smooth and spreadable.

Here's Porky Butt :) Can you believe I had him with no drugs!?! Man, I'm glad that's over with.

Oh my gosh! You were all belly! Your little guy is adorable! They grow too fast. The cake is cute too. Good question....why doesn't he have hair!?!

Holy cow almost 11 pounds! My guys were not even 5 pounds though in their defense they were twins and born 8 wks early. :) And WOW, no drugs too? You go girl.

Your cake looks terrific. Great job!

That is so great to hear someone elses kid loves Caillou. My girls love him, they sleep with lifesize stuffed dolls of him. They come with us on every vacation. I, too, have never understood why he has no hair and he is a bit of a whiner, but if you ever get a chance to get his xmas movie, get it. It is really good. We just watched it yesterday. Love the cake, it is adorable.

I can't believe you gave birth to an almost 11 lb baby with no drugs!!! You surely are a trooper :) I love your pregnant belly, too....SO cute and you definitely were all belly!!!!!

My first baby weighed over 10 pounds too! I had plenty of drugs because I ended up having a C-section after 26 hours of labor.

Love the Caillou cake! My boys liked the show when they were younger. We always wondered why the heck he had no hair!

What a cute cake, sounds delish too! We love Caillou, although at almost 6 my kid has outgrown him. Happy Birthday Chase!

I didn't have any drugs either, but my kid was only 8 lbs. Why do they say you forget the pain? I will NEVER forget that pain! Oh well, they are worth it!

Wow! That really does look like Caliou! I have to try and make one that looks like a my little pony for my daughter's 4th..or a carebear..she wants a carebear/MLP party...maybe I will end up doing both.
