Crash Hot Potatoes

Monday's the day I'm going to enter the world of Lunch Lady Land. My week "vacation" has quickly flown by and I can't say I've done anything exciting... lots of cleaning, laundry and I still have not finished the Halloween costumes. The kids are getting their H1N1 flu shots today and I'm still a little nervous and skeptical about it. They received there seasonal flu shot about a month ago and I was adamant about them not getting the new one, but since Chase falls into the high risk age group (2-4) and he's already high risk because of his asthma the doctor highly recommended it. It keeps running though my head if I didn't at least try this shot how would I feel if he contracted H1N1 and got so sick he was hospitalized or worse. Any flu mixed with asthma's not good. My husband also has asthma and got the flu last winter. I've never seen anyone so sick. I thought I was going to have to take him to the emergency room because he could not breath and his rescue inhaler was not working.

Looking back I've noticed a trend of not posting very many side dishes. I guess it's because I'm always making the same boring sides and not trying any new exciting ones. Has anyone else found themselves in the same-old, same-old side dish rut? While browsing Tasty Kitchen I spotted this different twist on potatoes and thought they sounded yummy. I was right, they were very good and a great change from baked or mashed potatoes (what I normally make). You can play the with seasonings to your liking. I didn't have any red potatoes at the time, so I used Yukon gold and they were great! Enjoy :)


HOT CRASH POTATOES
6 whole Red Potatoes
1/2 - 3/4 Stick Butter
Fresh Chives
2 tsp garlic, Minced
Salt
Pepper

Boil red potatoes until fork tender. In the meantime, melt butter together with minced Garlic. Use as much or as little butter and garlic as you like. When potatoes are done, drizzle baking sheet with olive oil. Slightly smash potatoes until flesh is exposed, but potato is still intact. Brush melted butter and garlic mixture on potatoes. Snip fresh chives over each potato and sprinkle each with salt and freshly ground pepper. Bake for 20-25 minutes or until potatoes are crisp and golden.

Those do look tasty! I too get stuck in the side dish rut. Potatoes, potatoes, potatoes. Occasionally I'll do rice pilaf, but those are few and far between!
Great recipe, I think I'll swipe it and try it for dinner tonight!

Those are a favorite around here, as well. I love to make them in the summer time when I have fresh herbs to top them off.

I'm glad I'm not the only one hesitant for their kids to get the H1N1 flu vaccine. Our school is offering it for free (students only) and I'm still thinking about it. My daughter got a horrible case of the flu during the holidays last year. She ended up with painful complications and some of her hair started to fall out. I DON'T want to go through that again, but I'm a little afraid of such a new vaccine.

That sounds like a great new side dish. You are right, I almost never post new sides either!

In an effort to make you feel better, the infectious disease specialist from Children's Memorial Hospital here in Chicago said that the risks with the H1N1 vaccine are the same as with any other vaccine.

Oh Heidi I was the same way about the H1N1 shot. Now I cant wait for Dallas Country to get enough doses in to get to the public. We are still on health care providers. My two sons are high risk being asthmatic as well. My dr recomended the shot so we are waiting. I just want to tell you please please get the shot. My friends son is asthmatic and Jake contracted the swine flu. He is currently at childrens hosp of dallas and has been there for a month. He almost died. Respiratory arrest, chest tubes in both lungs and on ecmo. He had blood around his heart and contracted mrsa staff as well. he almost died that first week. Jake is finally out of the woods but a couple more weeks in the hospital. when it hits home and you know someone and you actually see it and see it bad, you change your mind. I dont want kids to go through that. Here is the video of Jake he made national news cause he survied. It scares me more if they get h1n1 then getting the shot.

Heidi, these look so good and crunchy. I am only giving my girls the regular flu shot. I do not know enough about the other one and my kids will not be the guinea pigs for it. Just my opinion.

I've made these several times and we LOVE potatoes like this. Oh my. So crunchy on the outside, soft on the inside, and love the seasonings. Just fabulous.

I think sides are difficult to come up with new recipes. I'll have to join you in thinking of new ways.

Definitely looks tasty! I admit I tend to forget sides completely - I usually opt for one-dish meals or plain veggies as sides. This might be quick enough to fit into the hour or so between when I decide what I'm going to cook and when dinner is "due"!

Yum, I've made these a zillion times! My kiddos love, love, love them! You can top them with anything and they turn out fabulous. I've made them in my toaster oven, in my cast iron skillet and the oven. Yours look great.

These are a favorite at my house! And they're so versatile you can change up the toppings... leftovers are great in burritos or in scrambled eggs... well.. that is IF you have any leftovers!
