skillet supper

I've been busy finding new recipes on everyone else's blog and trying them and haven't posted a good 'ol tried-and-true recipe in quite a while. Well, here's a great one I've been making for years. I got the recipe about 5 years ago when my friend Tasha bought me a copy of the Gooseberry Patch cookbook Mom's Favorite Recipes. It's a wonderful cookbook! If you like quiche or omelets you will love this skillet dinner. The flavors of the ham, peppers, onions and potatoes blend wonderfully with the eggs and cheese. The bottom layer of the potatoes get lightly crunchy and make a wonderful "crust". The next time you have leftover ham, put this meal on your menu. Enjoy :)

SKILLET SUPPER
1 1/2 TBSP butter
3 potatoes, peeled, sliced thin
1/2 cup green onions, chopped
1/2 cup green pepper, chopped
2 cups cooked ham, diced
1/2 tsp salt
pepper to taste
3 large eggs, slightly beaten
1/2 cup shredded cheddar cheese

Melt butter in a 10" skillet; layer with half of the potatoes, half of the green onions, half of the
peppers and half of the ham. Sprinkle with salt and pepper; repeat layers. Cover and heat until potatoes (be careful not to set the burner to high or the bottom layer of potatoes with burn), about 20-25 minutes; pour eggs evenly over the top. Cover and heat until set, about 17 minutes; uncover and sprinkle with cheese. Recover and heat until melted; cut into wedges to serve. Serves 4

I made ham the other night and was trying to decide what to do with the leftovers...thank you for a wonderful suggestion! I LOVE omelets--especially those with ham :) I'm wondering if I can convince my husband to try this or if I'll just need to make a "mini version" for myself?!?

I love the Gooseberry Patch cookbooks! I have a bunch of them that I've gotten as gifts over the years. I don't have Mom's Favorites, though.
