Spinach Salad with Strawberry & Bacon

I cannot tell you how excited I am this crazy computer FINALLY let me upload my pictures! I have been trying since yesterday afternoon to post this recipe and my computer's been down right terrible :( Wouldn't you like to throw your computer sometimes? I actually got to do it this summer. Ah... the perks of janitorial work. The school was throwing some old computers and monitors away and I had the honors of getting to toss them into the dumpster. I think the memory may be the highlight of my custodial adventure. I know you probably thought I had completely forgotten about posting, but that's far from the truth. I was M.I.A only because I had a busy weekend and a temperamental computer. I hate to admit this because it means I'm getting old, but I had my 10 year class reunion Saturday. We had 40-ish in our class and only about 14 showed up, but I think it was a huge success. We all looked pretty much the same... very young of course! We also had some great food. I asked for several recipes (is food all I think about?). I brought this yummy spinach salad. Isn't it very colorful and pretty? We had a carry-in last week at school and this is the salad the 6th grade teacher brought. It was great. I don't post nearly enough side dishes and I would recommend this to anyone. Enjoy!

Here's the Northwest High School class of 1999 reunion goers. I'm the one in front all the way to the right with the spiffy new butterfly shirt on... you know, the only dorky one saying cheese!


SPINACH SALAD WITH STRAWBERRY & BACON
1 bag prewashed spinach
1 cup sliced strawberries
6-8 pieces of cooked and crumbled bacon
DRESSING
3/4 cup sugar (I used Splenda)
1 tsp dry mustard
1 tsp garlic salt
1/3 cup red wine vinegar
1 TBSP grated onion (I didn't add this)
1 cup vegetable oil
Mix sugar, mustard and garlic salt; add vinegar onion and oil. Pour onto spinach, strawberries and bacon right before serving (I only used about 1/4 of the dressing).

The salad looks wonderful. I just recently discovered how great fruit and fresh spinach go together. Your class reunion sounds fun, although I find mine traumatic (the older I get).

I love strawberries in all salads, but especially spinach salads!

I'm chuckling to myself that your 10-year reunion means you're getting old. My 10-year reunion was 17 years ago! :) We've had one every 5 years since graduating (5 so far) and they're always a lot of fun.

hey, we were in the same class. my class just had their reunion too, but i don't live in town anymore, so i wasn't able to go. it looks like a lot of fun though!

I have this same recipe minus the bacon, I'll have to try it with though. Everythings better with bacon, right?

I am laughing too about your 10 year reunion - my 20th is next year! I feel so old now! It must have been fun to have such a small class, I bet you all knew each other.

The salad looks delicious! I will have to save it for when I have friends over though, my hubbie hates spinach.

I love strawberry and spinach salad, never thought about adding bacon to give it a salty tang. My mom does this recipe with mandarin oranges as well - so yummy!

OOOOOO! I love spinach and strawberry salad. NEVER thought to add bacon though! I'll be trying that very soon!
