Chocolate Covered Peanut Butter Cheesecake Bites

Today's National Infant & Pregnancy Loss Awareness Day. I hope none of you have had to endure the pain of losing a baby... I wouldn't wish it on anyone. On November 15, 2000 my son Matthew was born "sleeping". Everyday I think of him and wish I could hold him and tell him how much I loved him and wanted to be his mommy. Please light a candle at 7:00 PM in memory of all the lost little ones.

Here's a yummy twist on a peanut butter ball. The filling's peanut butter-yummy! Thanks for the recipe Suzie Homemaker.

CHOCOLATE COVERED PEANUT BUTTER CHEESECAKE BITES
1 8 oz block Cream Cheese (softened)
1 cup peanut butter
1/4 cup splenda
chocolate chips or chocolate candy coating

Mix all the ingredients in a medium-sized bowl with an electric mixer. Chill the mixture in the fridge for 30 minutes to 1 hour. Roll the mixture into 3/4-inch balls. Dip balls into melted chocolate/candy coating and then chill for an additional 15 minutes before serving.

Sorry to hear about your son and am glad there is a day to honor all the little babies. I know several other women, who today are honoring their babies as well.

My heart goes out to you, Heidi. I can't imagine losing my baby. That is really touch. My mother-in-law also lost her baby when he was only 2 and it's just something that I don't think I can bear. I'm so glad that you're so strong and sharing your amazing talent with all of us.

The peanut butter cheese balls sound amazing! Yesterday I was craving something made w/ peanut butter. I think I will try it. Thanks!

Our daughter was born sleeping on october 7 2002. This month is tougher than all others for me. We are in a club that none of us wanted to be part of. Thinking of you and knowing how you feel Clare

I'm sorry about your baby boy. Our son Joshua was born at 26 weeks in 2004 and only lived a few minutes. Losing a child is truly a pain that I would not wish on anyone.

I can't even begin to imagine your pain, Heidi! I am so very sorry for your loss.

As for your recipe...it looks delicious! I'd almost be afraid to make them, b/c they'd be gone in all of five minutes! Oh, and I felt awful about you not winning that cook-off! Your recipe sounded delicious and certainly way more "complex" than the winner! I definitely agree that they should have judged it differently. They should have sampled each individual dish, jotted down some notes and then gone back and discussed all of them and compared what they liked/disliked. Ughh! I know you were really hoping for that grocery money!
