Cornflake Chicken


Yum, Yum, Yum-mity, Yum... this chicken's DELISH!! It's another great one from the 30 Meals in One Day cookbook set. I'm still thoroughly enjoying the cookbooks and am thankful to be given the opportunity to do so. This recipe comes from Dinner is Ready! I'm not a gourmet-type cook and all the recipes fit in well with what my family enjoys. I love the fact the books contain sections for oven, stove top and crock pot preparation. I also love the fact her family was the guinea pig for the recipes, so I know they're all pre-tested and going to be great. I'm looking forward to making this quick and easy, crunchy-coated chicken again. I've passed along the recipe to my mom and she's already made it several times because her and my dad enjoyed it so much. I hope you try it out and enjoy it too :)

CORNFLAKE CHICKEN
6 boneless chicken breast halves
1/2 cup evaporated milk
1 cup cornflake crumbs
1 tsp salt
dash pepper
3 TBSP butter (cut into 12 pats of butter)

Spray baking sheet with cooking spray. Place 6 pats of butter on baking sheet. Dip chicken first in evaporated milk, then cornflake crumbs. Place coated chicken on a pat of butter and sprinkle with salt and pepper. Top chicken with another pat of butter. Bake at 350 for 30 minutes.

I LUV LUV LUV cornflake coating on my chicken. It's an oldie but a goodie, and really I don't know that there is anything finer than this. Glad to see it posted.

I love how down to earth you are, Heidi! I'm not a "gourmet-cook", either--I'm all about recipes with ingredients I know how to pronounce and ones which won't cost me an arm and a leg! Sometimes I'll be a little more "daring/adventurous", but I like to stick to more simplistic recipes that I know my whole family will enjoy. I've never tried coating chicken with cornflakes, but I bet it's great! Will definitely have to give this one a try!

P.S.--I need to look into these cookbooks you're talking about, too!
