Easy Buttermilk Pancakes

WHEW... I made it through Christmas!!! I love the holiday season, but it can be stressful. I hope everyone made it to their destination safely. Our driving conditions are still pretty yucky. When you live in a small town the road grater man seems to remember you last. My husband called me at 4:30 this morning and even in his big 4x4 Dodge he got stuck sideways in the road. Luckily about 10 minutes later he called and maneuvered his way out. He knew I wouldn't be able to rescue him. I'm not much of a driver!!
If you're like me and made 101 different cookies, bars and candy for gift trays and had Christmas dinner at your house, you may be looking for simple dishes to prepare the next few days. Today's grocery day, but because of the weather and day after Christmas sales I will be putting it off. We're out of bread and almost out of milk, but the kids demanded breakfast... the little rascals :) I quickly whipped up these easy pancakes. Everyone enjoyed them and they're almost as easy as the stuff in the box. Enjoy :)

EASY BUTTERMILK PANCAKES
1 cup flour
1 teaspoon salt
1 teaspoon baking soda
1 egg
1 1/8 cups buttermilk
2 tablespoons butter, melted


Preheat and lightly grease a large skillet or electric griddle. Mix the flour, salt, and baking soda together in a bowl. Add the egg, buttermilk, and butter; stir together lightly, but keep it lumpy. The batter should look thick, spongy, and puffy. Drop 1/3 cup of the batter onto the cooking surface, spreading lightly with the bottom of the cup. Cook until lightly-browned on each side, 1 to 2 minutes per side.

I love buttermilk pancakes. I've tried various pancake versions (gingerbread, oatmeal, etc), but buttermilk is my favorite!

Great recipe! And for those of you out there who don't have buttermilk in the fridge, you can cheat by doing this: Pour 1 Tbsp. of lemon juice into a measuring cup, then pour in milk to equal 1 cup; let sit for 5 minutes.
