Round 2- Easy Chicken Fried Rice

Brrr... It's cold outside!!! Now it finally seems like Christmas time. I hope everyone's ahead of me and has their holiday shopping done. I haven't been with the program this year. Usually I start shopping clearance at the first of the year and hide it away, but unless I have a really bad memory I procrastinated this year. I know I promised this recipe yesterday, but I have a good excuse. I was making ornaments with Sophie's Kindergarten class. They did a great job and I hope everyone had fun. I'm sure they did because I brought cookies :) Me, I think I'd rather have fried rice. I LOVE it. It basically consists of throwing leftovers together. You can change it accordingly.

leftover cooked, diced chicken (I used about 3/4 cup San Francisco Chicken)
leftover cooked rice (I used 2 - 3 cups)
1 egg slightly beaten
veggies (I used a bag of the kind you steam in the microwave)
soy sauce

Heat diced chicken in a skillet (you can use a little oil). Add rice and veggies and cook until warm. Push to one side of the pan leaving an empty spot to pour the egg. Cook and stir egg to scramble. When egg is done mix together with rice, veggie and chicken mixture. Slowly add soy sauce and stir. Taste and add more soy if you desire.

This is a wonderfully easy and delicious meal...I love fried rice!
I do not have my shopping done either, and this 20 degree Mo. weather does not make me want to get out! I may be shopping on Christmas Eve this year, Heidi!

That looks yummy!! Don't feel bad, I'm so far behind it's not funny. I don't even had any decorations up and I'm considering just skipping the whole mess. We go over to my son's house for Christmas so it's not that big a deal. I may be out there with Lynda on Christmas Eve.

We had a couple days of cold, then back to warm and just when I was planning to go shopping tomorrow, it's supposed to drop into the 30s!!

mmm, i do loved fried rice! i'm not with the program at all either. i haven't even decorated yet, i'm such a scrooge!

Yummy fried rice. Nice recipe.

Bought the one big gift, now need to go and pick up a couple of small things (there's just the 2 of us). We have a wreath on the door, but that's it. How many days til Christmas?

Crazy! That's exactly what my hubby does! Except he makes fresh chicken... It would be a lot easier using leftovers. I can vouch..this is a great recipe!
