Sometimes there's nothing more comforting than indulging in the foods we loved as a kid. Graham crackers with icing tops my list. I found this yummy recipe while browsing allrecipes. While I can't say for certain it's the best white icing recipe ever, it's the best I've tried. It's great for decorating or can be thinned to ice your every day cake or cupcakes. If you're needing a recipe suitable for allergies it's excellent because it doesn't include eggs or milk products. Enjoy :)
EVER WHITE ICING
4 cups confectioners' sugar
1 cup shortening
2 tablespoons water
1 tsp clear imitation vanilla extract (I used regular vanilla)
In a large bowl, combine sugar, shortening, water and vanilla. Beat on low speed to combine, then beat on medium speed for a full five minutes. It won't look like Icing at first, but keep the mixer going for a full five minutes, and then you're done!
*If you're not using this for decorating, but just for icing the cake, thin the icing by adding 3 tbs. of corn syrup, or water to the icing.

BTW, the escarole is found in my market near the lettuce , etc. It has a bitter taste sometimes, so I soak it first. I love it in the soup:)
I'm always trying new frosting recipes, because I haven't found the "best" yet... Going to have to try the "Best Ever" and see!!
Graham crackers with frosting was a big treat when I was a kid too. Now, whenever I have frosting leftover after making a cake or cupcakes, I make the same treat for my kiddos.
