Cakeballs for Breast Cancer Awareness

I'm posting these yummy little beauties in honor of my Aunt Cathy's last session of chemo (which was last week, so I'm a little late). I love making cake balls and thought the strawberry cake with cream cheese icing dipped in white chocolate would be fitting for the occasion. I finished them off by tinting white chocolate and painting the breast cancer awareness symbol on them. Cathy's an incredibly strong, hardworking spirited woman, not to mention a wonderful mom and grandma. I'm proud to be her niece :) I also made carrot cake and cream cheese icing cake balls dipped in white chocolate. Holy-Moly-Yum-O-Rolly!!! If you've never made cake balls you must try them. They're a fun, easy alternative to traditional cake. They take a little extra time, but are totally worth it. These cuties always receive lots of compliments. Enjoy... how can you not? They're cake dipped in chocolate :)

CAKE BALLS
1 boxed cake mix, any flavor, baked according to package directions in 9 x 13 pan
1 can icing (16 oz), any flavor (I only used 3/4 of the can)
candy coating (about 3 oz)

Using a fork, crumble completely cooled cake. Add icing and mix well. The icing will completely blend into the cake. Form into balls using a melon baller (or your hands if you don't have one). Place balls on a cookie sheet and place in freezer for 15 minutes. Melt candy coating. Using a toothpick, dip balls into candy coating. Place on wax paper to set.

Heidi, what a dear dear niece you are to honor your aunt like this. Surely the apple does not fall far from the tree or the cake ball far from the plate!

I have not yet made cake balls (there's only the 2 of us) but surely I must add these to my to-do list.
