Mexican Rice

I just got done sticking my hand down the toilet. Yes, you read right, the TOILET! I was toy hunting. Chase was taking a bubble bath and Sophie went in to go potty. Before I knew it I had a wet, naked 3 year old running through the living room crying his sister put a toy in the toilet. I went to investigate, but the toilet was full of bubbles. Someone had taken the cup I use to rinse shampoo out of kiddie hair and filled it with bubbles before emptying it in the potty. I didn't want to flush because who knows what could have been in there to cause future plumbing issues, so I had to bite the bullet and do the old one handed toilet swipe. Luckily for me there were no toys or other surprises in the toilet. I would like to kiss the person who invented anti-bacterial soap :)
Enough toilet talk. I would like to share an awesome rice recipe. If you enjoy the rice served at Mexican restaurants you will love this recipe. It's super simple to make and calls for less than 5 ingredients. It will perfectly compliment any taco-ish meal your heart desires. This recipe comes from a site I love to visit Your Home Based Mom. MEXICAN RICE
2 TBSP olive or vegetable oil
1 cup long grain white rice (uncooked)
2 cups chicken broth
1 small can tomato juice
salt and pepper

Heat oil in skillet. Add rice and stir frequently over medium high heat until lightly browned. Add chicken broth and tomato juice. Salt and pepper to taste. Stir thoroughly. Reduce heat to simmer and cover tightly with a lid. (I "stir" the mixture several times while it’s cooking by shaking/moving the skillet back and forth so that I don’t take the lid off.) Simmer/cook for about 20 minutes or until the liquid has been absorbed. Once the liquid has been absorbed, turn off the heat and leave mixture alone with the lid on for another 10-15 minutes.

But the rice recipe looks like a super easy and great side dish. I have a favorite mexican rice but it takes way more time and who has that during the week? Thanks for posting.

I remember well, how many times we've had to *remove* the toilet, because one of the kids flushed a toy. Glad to didn't have to go to such lengths!

Isn't it fun to be a mom? I've been lucky, I've never had to fish any toys out of the toilet (did I just jinx myself?).

The Mexican rice sounds great! I'm always on the lookout for new rice dishes.

Kids! They think of doing the funniest (not!) stuff sometimes! :D

Your rice looks quick and tasty! We eat Mexican food a lot and this would be a great side or addition to a burrito.

That rice looks good. I made a similar batch the other night with leftover white rice from the Chinese restaurants, only added some cumin, hamburg, and green pepper. Man do I love that stuff.

I came to tell you that I sprinkle the brownies with chocolate chips before baking (although after would probably work too) and I'm so glad you posted this rice recipe. I tried to make something similar the other night and I didn't like the results. I prefer the simple old rice like the stuff they have in Mexican restaurants, and I think this is just what I'm looking for.
