Grandpa's Mint Brownies

I didn't want to be a party pooper, so I decided I'd better post something in the St. Patrick's Day spirit! I'm proud I remembered to wear green today. I'm sure some of the kids at school would love an excuse to get to pinch me :) They would love me if I shared some of these brownies! Extremely rich and fudgy these beauties pack a punch of mint and were an absolute favorite of my grandpa. Aunt Charlotte brought them to Christmas dinner bringing back some great memories. She hadn't made these brownies since grandpa died in the early 90's and it was a nice way to remember him. Thanks Aunt Charlotte for sharing this recipe. Enjoy!

GRANDPA'S MINT BROWNIES
Brownie
1 cup sugar
1/2 cup margarine or butter
4 eggs
1 cup flour (unsifted)
1/2 tsp. salt
1 can chocolate syrup (16 oz)
1 tsp vanilla
Frosting
2 cups powdered sugar
few drops peppermint extract
1/2 cup margarine or butter
green food coloring.
Topping
1 cup chocolate chips
6 TBSP margarine or butter

Mix the above brownie ingredients and pour into a greased 9X13 pan. Bake at 350 degrees for 30 minutes and cool completely. Mix the above frosting ingredients and ice the cooled brownie layer. Refrigerate. While chilling, melt 1 cup chocolate chips and 6 Tbsp. margarine or butter. Stir, cool for five minutes then pour over icing layer. Cool and cut into small pieces (they are VERY rich!)

They remind me of my mom's creme de menthe bars and I love those! Definitely a winner! Your grandpa obviously had good taste. : )

Typically I'm not keen on chocolate, but I do like chocolate and mint. Would definitely enjoy these. So nice to have a recipe that your grandpa loved. It's a touching and enduring way to stay connected to those we love.

I think these were originally Taste of Home because my mom used to make them from the magazine and I remember making them for Sr. dinners (So glad I'll never do those again!). These are really yummy and even better in the fridge a day or two.
