Never Fail Homemade Noodles

I know what you're thinking. Nothing can be never fail, right? Well... I'm sure someone has made these noodles without the best results, but that person isn't me! I found this recipe (yes the original name includes the words never fail) in a 1976 cookbook sold as a fundraiser in my community. The recipes are all from local people and I know several who have been making this recipe more years than I have been alive. Don't you love those kinds of cookbooks? When you live in a small community you learn who is known for being a great cook... and who isn't. You can pick recipes you want to try accordingly :) These noodles freeze very well after they have been cut and dried for several hours. I usually double the recipe and make a big pot of chicken and noodles by boiling my chicken with onion, celery, carrots, salt and pepper. De-bone the chicken and remove the chunks of veggies from the broth and bring to a boil before adding the noodles and cooking until tender. You can't get much better than that! It's comfort food at it's best. Enjoy :)

NEVER FAIL HOMEMADE NOODLES
1 cup flour
1 egg
1/2 tsp salt
1/4 tsp butter
1/4 tsp baking powder
2 1/2 TBSP milk

In a bowl, place flour and make a well. Drop remaining ingredients into well. Mix with fork, then fingers until it forms a very stiff dough. Roll out on a floured surface until very thin. Let stand 20 minutes and cut as you desire (I use a pizza cutter). Spread noodles out and use or dry for 2 hours. Drop into broth and cook until tender.

definitely going to give these a try. I can remember my mother cutting pasta with a pizza cutter thingy too. Thanks for the memory and for the recipe. Well done!

I've never tried making my own pasta but I could do these! Bookmarking this to give a try. They'd be great in chicken noodle soup.

Local cookbooks are my very best favorite even when I'm not one of the locals, LOL

Lots home made pasta recipes lately however, perhaps, I should begin with No Fail Homemade Noodles, just in case:)

Thanks for sharing, Heidi...

Wondering if the butter is softened, melted, or just from the fridge. What do you do Heidi?

Yum! I have issues when making noodles. Sometimes they are good sometimes not. You recipe is a bit different than mine so I think I will use yours next time. Thanks!

Zoey- I usually just use the tub butter (country crock) because it is already soft. If you use stick butter I would let it set out until it's room temp. and softened.
