Hamburger Rice Skillet

WANTED: To stop sneezing a bazillion times a day, to be able to breath properly out of my nose, to lose the headache and scratchy throat, for my itchy watery eyes to feel normal, not to be miserable every time I go outside... for my allergies to go AWAY!!!! Anyone else feel my pain?
If you're feeling miserable like me this is a quick and easy dinner you're sure to love. It's from Hillbilly Housewife so how could you not? We liked this dish reminiscent of my stuffed pepper filling. I hope you do to. Enjoy :)

HAMBURGER RICE SKILLET
1/2 to 1 pound ground beef or ground turkey
1 onion, diced
2 cups cooked rice (leftover)
8 ounce can tomato sauce, or 1 cup chopped tomatoes (canned or fresh)
1/2 cup water
Salt and Pepper to taste
1/2 cup shredded cheese

Brown and drain ground beef with onion. Add rice, tomato, water, salt and pepper. Mix up, breaking the rice into small pieces if it clumps. Cover the skillet and simmer for 10 minutes. Add a little more water if necessary. Sprinkle the cheese over top and serve.

Sorry to hear about the crazy allergies. I have the runny, itchy, yucky eye problem and it drives me crazy!

The rice bake looks quick and tasty -yum!

I'm in the same situation, Heidi. My two best friends right now are Zyrtec (OH MY GOD $$$$) and nasal irrigation (like waterboarding only not administered by the CIA).

I love this quick and easy recipe, perfect for the middle of the week.

I've made my own version of this a bunch of times. It's good isn't it? And adapts easily to whatever add ins you want. I throw in black beans and would add corn if my youngest wouldn't pick it out. Cooked potatoes are good,too instead of rice. You can also throw it into a casserole add top with cheese and bake it for a few. Then the best part...broil the cheese until lightly brown and bubblely Your's looks great and has reminded me that it's been a while.
