Tina's Hot Water Cake

Yes, Tina Carver, your eyes aren't deceiving you... this is your cake recipe. I'll bet you're surprised because you didn't know I had it! For those of you who don't know Tina, she's my girl :) My faithful followers will remember what I did last summer, but for those of you who are new I'll fill you in. Last June my husbands hours got cut. I'd been a stay-at-home mom for 8 years and wanted to stay that way until Chase went to school, but it wasn't an option if we wanted to pay our bills. Luckily our local school was in need of a summer janitor and I got the job. I won't lie. Basically, the job sucked! You can't imagine everything a summer janitor does getting the school ready for the next year. Even though it was dirty work (literally) I never one time dreaded going because of the wonderful janitorial staff. Tina, Becky, Mark and Tony made going to work fun. I know I will always be able to call them my friends. After the summer was over I filled in as elementary janitor for a few months until the lady I was subbing for was able to come back. I got to spend every day with Tina and she's one of the best friends I'll ever have the pleasure of claiming. I was really surprised when my Aunt Patti showed up on Easter with this delicious cake and said it was Tina Carvers recipe. I couldn't believe Tina had held out on me! What were you thinking girl? This cake's rich, delicious and easy to make. It reminds you of Texas sheet cake. The next time you're having a chocolate attack, don't think twice, make it! You will LOVE it! Enjoy :)

TINA'S HOT WATER CAKE
Sift together:
2 cups flour
2 cups sugar
1/2 cup cocoa
1 TBSP soda
1 tsp salt
Add & mix:
1 cup oil
1 cup buttermilk
1 tsp vanilla
Add:
1 egg
1 cup boiling water

Grease 9 x 13 pan. Pour in batter and bake at 375 for 40 minutes or until toothpick stuck in meddle comes out clean.

CHOCOLATE FUDGE FROSTING
1 cup margarine
3/4 cup sugar
1/4 cup milk
2 TBSP cocoa
2 cups powdered sugar
1 tsp vanilla

In saucepan cook and constantly stir margarine, sugar and milk for two minutes on medium heat. Cool. In bowl mix cocoa, powdered sugar and vanilla. Beat in cooled milk mixture until smooth. Add more milk or powdered sugar if needed. Pour on cake. Wash face to remove the frosting you got on it from licking out the bowl :)

I love your recipes, but what I love the most is the plates you photograph them on. Those are the plates I grew up with! :)

Heidi you are so very sweet ! I really love working with you and I wish we could have another summer together....It sure will not be the same this year. I actually enjoyed coming to work last summer for the first time since I started working there ! You are truly like a breath of fresh air. We all miss you at the Elementary School!Will miss you! Enjoy the summer off with the kids!

I was a summer janitor for our local high school for my 3 college summers - and worked at the elementary during college breaks. Ooh the hours spent scraping gum off the underside of desks and cleaning out nasty gym lockers. Eww. I know just what you're talking about - nasty job, but I, too, had GREAT people to work with that I'll never forget!

As for the cake... YUM...and easy!! Loved this: 'Wash face to remove the frosting you got on it from licking out the bowl :)' in your frosting directions! Hehee!

Got all of the ingredients and I ALWAYS have a craving for chocolate! Might just give this a try this afternoon!
