Easy Enchiladas

Need something quick and easy? These enchiladas fit the bill. They're cheese-o-licious :) Don't cringe at the messy plate... that just means they're so good I couldn't wait to take a photo (or it means I forgot until I had already started eating!) Enjoy :)

ENCHILADAS
1 lb ground beef
1 onion, diced
1 cup cooked rice (I used leftover rice)
1 can nacho cheese or 2 cups shredded cheese
1 can enchilada sauce
flour or corn tortilla shells

Brown and drain ground beef and onion. Mix rice, 1/4 can enchilada sauce and 1/2 can nacho cheese sauce (or about 1 cup shredded cheese) into the beef and onion and mix well. Spray a 9 x 13 dish with cooking spray and spread a very thin layer of enchilada sauce on bottom. Fill shells with beef, rice and cheese mixture and place seam side down in baking dish. Cover with remaining enchilada sauce and cheese. Cover and bake at 350 for 30 minutes or until hot and melty.

I do that all the time, hop up mid-bite to take a picture of our dinner for the blog. Sometimes my kids' friends ask, "Why is your mom taking pictures of your food?" and they say, "Oh, it's just for her blog." Love your blog! Maybe this is a dumb question but do you need a big can of enchilada sauce or a small can? These look so yummy I can't wait to try them.
