Like many of you, I'm sure, I have some Twilight fans residing in my household. The girls and I had a lot of fun making (and eating) these adorable cookies in celebration of Eclispe coming out in movie theaters today. If you're not a Twilight fan, that's fine, just bookmark this recipe until Halloween. It's sure to be a hit! Enjoy :)
VAMPIRE COOKIES
3/4 cup butter, softened
1/2 cup white sugar
2 egg yolks
1 3/4 cups all-purpose flour
2 tsp vanilla
1/4 tsp salt
1/2 cup red fruit preserves
Preheat the oven to 375. In a medium bowl, cream together the butter, white sugar, vanilla and egg yolks. Mix in salt and then flour a little bit at a time until a soft dough forms. Refridgerate at least 1 hr. Roll 1/2 the dough out to 1/8 inch thickness on floured surface and cut into 3 inch rounds. Place on cookie sheet and top with 1 tsp jam. Roll and cut remaining dough and place on top, pinching edges. Poke 2 holes (to look like a bite) in each cookie. Bake 10-12 minutes.
Aren't they cute? I dusted a few with powdered sugar.
