Homemade chips

I'm back! Makayla's feeling much better. The regular x ray and dye test both showed no kidney stones. She had antibiotics in her iv at the hospital, but they didn't send any home, so when she started feeling really bad again Sunday we figured she had an infection. Wasn't I surprised when early Monday morning she passed a stone WAY bigger than the little sandy stuff she passed at the hospital. I'm a little ticked we had 2 different kinds of x rays showing nothing... do you think that means we won't have to pay for them?!? She feels much, much, much better now :) The doctors say heredity plays a huge part in the reason she's a stone former. Her dad has gotten them every 2 - 3 years since he was 17 and they run in his family. My mother has had them several times also. Hopefully we can control them forming with diet and not medication. Picky pants will not be happy but I see a new way of eating in her horizon.
Here's a fun recipe I've been making since I was a teenager. I don't remember where I found the recipe, but recently saw it pop up on another blog and wanted to share it with you. The kids LOVE these chips. Enjoy :)

HOMEMADE MICROWAVE CHIPS
2-3 potatoes
cooking spray
salt & pepper

Remove the glass tray from the bottom of your microwave oven (mine is circular and rotates) and clean well with soap and water. Spray entire surface of tray with cooking spray. Very thinly slice potatoes (You want them as thin and even as possible... thin enough to see through) and arrange them completely covering the glass tray. Sprinkle potatoes with a good coating of salt and pepper. Lightly spray the top of potatoes with cooking spray. Place in microwave and heat until the chips are lightly browned and crispy (mine takes about 13 minutes). Remove quickly so they don't stick and enjoy with your favorite dip, salsa or plain.

What a great way to make potato chips! I'm going to have to try this - and it's a good excuse to clean out my microwave! ;-)

Sorry to hear your daughter had to pass another stone...but glad she's finally feeling better!

That sucks that your daughter had to go through that kind of pain again. My ex-husband has problems with them as well, and it was hard to watch him go through that kind of pain. Hope you can control it with her diet and not meds.

My dad used to make these, but he deep fried them, nice to see an alternative. My FIL had horrible kidney stones and he was told that pop is a big contributing factor to making the stones.

This idea is GENIUS! I'm glad your little one is on the mend. I've had kidney stones a few times, and they are definitely no fun.

this recipe is perfect! i've always wanted to make my own but hate the tons of cooking oil that requires them.

i agree, you have to change your daughter's diet. kidney stones are no fun.

Poor little girl! Glad she is doing better now.
Why can't you leave the glass tray in the microwave and cook them on there? Just curious.

OUCH! OUCH!

But good luck on the bill. Car mechanics and hospitals are the only ones who can treat the wrong problem or not fix it and still charge you!

Love doing homemade chips, they are so good!
