Hashbrown Casserole Duggar Style

Yummy, yummy, in my tummy! I love me some hash brown casserole! It's cheesy, gooey and crunchy on top. Can comfort food get any better? Add some ham and it's a main dish. Did I say this was yummy? I don't think I mentioned it. Guess what? This stuff is YUM-E with a capitol YUM! I found the recipe a few years ago on the Duggar family website and have been making it since. Hurry up! Quick! Write this on your grocery list. Did I mention it was yummy? Enjoy :)

HASH BROWN CASSEROLE
1 (32 oz.) pkg. frozen hash browns (2 lbs.)
2 cans cream of chicken soup
1/2 c. milk
2 t. onion powder
1/2 t. pepper
2 c. grated cheddar cheese
Topping
1/4 c. melted butter
3 c. cornflakes (I had Corn Chex) crush in Ziploc™ bag, pour
melted butter in & shake.

Spray casserole dish with oil. Layer 1/2 hash brown first. Then pour 1/2 of soup mixture = cream of chicken, milk, onion powder, salt, & pepper. Then half of the grated cheese. Repeat… Hash browns, soup mixture, grated cheese. Top with crushed, buttered corn flakes. Bake at 350 for 45 min.

My mother-in-law made a similar casserole and called it funeral potatoes. Despite the depressing name, my husband still loves me to make it for him.

I'm always fascinated by what the Duggers find to cook (not to mention their restaurant size/style kitchen. This hashbrown casserole looks tasty and extremely versatile.

Yum! This has been a Holiday favorite of my family since I was a little girl. My grandma, now in the nursing home, would make it for me every year for Christmas and Easter dinners because she knew how much I loved it.

I use a similar Cracker Barrel version. You are right, yummy stuff, although I can only eat it a few times a year without scheduling a cardiologist appointment, ha ha.
