Creamy Mints

Being cooped up in the house for 2 snow days with 3 kids can be nerve wracking. Why not spend the afternoon making some deliciously easy candy to sugar them up so they have the energy to destroy even faster!?! Not my smartest move, but if it counts, they had a lot of fun :) Chase picked the color (everything needs to be John Deere green in his eyes!). How adorable they would be for St. Patrick's Day. Tint them pink and they would be a fun way to say "I LOVE YOU" to your Valentine sweety. They would work excellent for a baby shower or wedding too. Keep warm and enjoy :)

CREAMY MINTS
1 package (8 ounces) cream cheese, softened
1 teaspoon mint extract
6-2/3 cups confectioners' sugar
food coloring
Sugar or sprinkles

In a small bowl, beat cream cheese and mint extract until smooth. Gradually beat in as much confectioners' sugar as possible; knead in remaining confectioners' sugar.
Divide mixture into four portions. Shape into 1/2-in. balls. Dip one side of each ball into sugar. Place sugar side up on waxed paper. Flatten with a fork, forming a crisscross pattern. Let stand 1 hour or until dry before storing in airtight containers; refrigerate. May be stored for up to 1 week before serving. Makes 12 dozen.

These look and so yummy, I think I'm going to make them in blue and white for a wedding this Spring. I wonder if could possibly roll them out and use cookie cutters to get shapes?

Amanda- I think the dough is to soft to use with cookie cutters. The orginal recipe suggests using candy molds. You want pretty small molds because they are rich. The mints firm up while setting out for the hour, but they are not hard.

Your recipe is very similar to mine. I like to use my cookie press to make the mints. It is very quick and easy. Thanks.

Heidi, I decided to make these spur of the moment last night. So good, and SO easy! I am a huge lover of all things peppermint, so of course they were a hit. So creamy and smooth and yummy :D
