Crispy Herb-Coated Pork Chops

I hope everyone enjoyed my list of year two blog favorites. It was SOOOOO hard narrowing down to a few. I like food to much! I hope you found at least one thing in the line-up worthy enough to try :)

Here's a yummy new pork chop recipe I spied in my collection of old Simple & Delicious magazines. I'm always amazed when I go back and look at the number of great recipes I passed over. This was a delicious find easily hitting the table in under 30 minutes (including prep time). My kind of recipe! The coating's wonderfully favored and cooks up crisp while the chops stay moist and tender. Little Miss Picky Pants Makayla even ate her entire serving! Enjoy :)

CRISPY HERB-COATED PORK CHOPS
1/3 cup butter, cubed
2/3 cup butter and herb-flavored mashed potato flakes
2/3 cup grated Parmesan cheese
3/4 teaspoon garlic powder
4 bone-in center-cut pork loin chops (6 ounces each and 1 inch thick)
2 tablespoons canola oil

In a shallow bowl, melt butter. In a large resealable plastic bag, combine the potato flakes, cheese and garlic powder. Dip chops, one at a time, in butter, then place in bag; seal and shake to coat.
In a large skillet, cook chops in oil over medium heat for 7-8 minutes on each side or until a meat thermometer reads 160.

This does sound very good! I'm going to have to put chops on the list for when I go shopping next.

I need to try a pan cooking pork chop like this, it has been a long time for me. It looks crispy and good.
