Chicken Taco Rice

Chicken. Taco. Rice. Yum! Yum!! Yum!!! You could eat it on a plate. You could make it for a date. You could eat it here or there. You could eat it anywhere... UMMMM. I think I have been listening to Sophie read to much Dr. Seuss! The joys of first grade :)

Rhyme or not, this is some good taco-ish grub. We ate it on nachos, but it would be great in a burrito shell or plain. Enjoy :)

CHICKEN TACO RICE
2 cups cooked shredded chicken (I used breast)
3 cups chicken broth
8 oz. can tomato sauce
1 pkg. taco seasoning
1 1/2 cups rice (uncooked)
1/2 cup green or red pepper, chopped
1 can corn, drained

Mix all in pan. Bring to a boil. Cover. Reduce heat and simmer 20-30 minutes or until water is adsorbed (it takes 40-50 minutes for brown rice). Let stand 5 minutes. Fluff. Eat. Enjoy.

Sounds yummy! I love all your mexican recipes:) My favorite is the Crockpot Nacho Supreme. Yum! A couple of weeks ago, a friend of mine shared a Taco Meat recipe from America's Test Kitchen. Oh my gosh is it every yummy. I posed it on my blog if you are interested, I know how you love Mexican fare (I apologize for the horrid picture)! http://diaryofarecipeaddict.blogspot.com/2011/01/best-taco-meat.html
