Soda Cupcakes

It's the attack of the cupcake vampire!  Actually it's that dang little daughter of mine... the twilight fan :)  Today was her pretend birthday at school (her real birthday's July 2).  She requested vampire cupcakes... and this was all I could come up with.  Not very original, but mighty yummy.  These awesome cupcakes are from a great Weight Watchers cookbook I love.  Only 3 ingredients will get you some seriously moist and delicious treats you can feel good about eating because hey, they're from a weight loss cook book and that means they're super healthy :)  That's my story and I'm sticking to it!  I topped them with my favorite fluffy boiled icing (it reminds you of marshmallow fluff).  Enjoy :)

SODA CUPCAKES
1 box chocolate cake mix (super moist devil's food works great)
2 egg whites
10 oz diet cola

Preheat oven to 350.  Place cake mix, egg whites and soda in medium bowl; beat by hand with wire whisk for 1 minute.  Spray cupcake pan or use cupcake liners and fill 2/3 full of batter.  Bake 28-23 minutes.  Frost or sprinkle with powdered sugar.

*I like to put cupcakes in a gallon zip loc bag when they are a tad warm.  I think it makes them more moist and delicious.

I love the idea of a pretend birthday during the school year, what a great idea for those who have summer birthdays. I agree about sealing the cakes in plastic while they are warm, I've done that for years and it never fails.

Aw,I think they are sweet! Yep, had a few of these "diet cola" cakes in my lifetime. I have no idea how or why it works, but it does.
