Baked Green Beans

Looking for a new and delicious way to cook your fresh green beans?  If so, this is the recipe for you!  This is the first time I've ever roasted them in the oven and they're completely yummy! I loved the ones on the edge of the pan that got crunchy.  Enjoy :)

BAKED GREEN BEANS
1/2 lb green beans trimmed and snapped in half
1/4 cup olive oil
sea salt and black pepper to taste.

Preheat oven to 425. Line a cookie sheet with tin foil. Toss the green beans in the olive oil, salt and pepper. Spread the green beans evenly on the cookie sheet and bake for 20 minutes.

The next time I roast a chicken, I think I'll throw in some green beans. I love the deep fried green beans at the Chinese restaurant, but this is a much healthier version, and I'm wagering it is just as good. Big YUMS up, Heidi. Thanks for sharing this.

Sounds delicious! This is also a perfect way to cook asparagus, it bakes in 10-12 minutes though! just drizzle a little olive oil and some kosher salt and black pepper to taste.

Roasting brings out the very best in vegetables, don't you think?
