Smothered Chicken

Smothered chicken is SO YUMMY!  I could really go for a piece of this tender, juicy chicken smothered in peppers, onions and cheese.  Licking the screen doesn't help either... it just makes a spot you have to clean off :(  This recipe comes from my friend Brenda. She owns a catering business and this dish is one of the choices.  I don't make it as good as her, but it's still super yummy!  Enjoy :)

Chicken breasts (4-6)
Lemon pepper, salt & pepper
Italian dressing (about 1/2 - 3/4 cup)
cheese (about 1 cup)

Season chicken breast and grill until outside has grill marks (inside will not be done).  This can be done in advance.  Place chicken in a baking dish and squirt with dressing.  Cover with foil and bake at 350 for 30-45 minutes (or until done).  Meanwhile saute onions and pepper until tender.  Place on top of chicken and sprinkle with cheese.  Return to oven for a few minutes to melt cheese.
